Ingredients:
- 1 cup (250g) cottage cheese
- 3 large eggs
- 1⁄3 cup milk
- 130 g plain flour
- 2 tbsp caster sugar
- 2 tsp baking powder
- ¼ tsp of salt
- 1 tsp vanilla paste
- 2 tbsp coconut oil, melted and cooled
- Butter or oil, for cooking
To Serve: (optional)
- Fresh fruit (e.g. berries, banana, stone fruit)
- Maple syrup or honey
Method:
In a medium bowl, whisk together flour, baking powder, sugar and salt. In a blender, add cottage cheese, milk and eggs. Blitz until smooth and creamy. Pour blended mixture into dry ingredients. Add coconut oil and vanilla paste, then gently stir until just combined – batter should be thick.
Heat a non-stick frying pan over medium heat and lightly grease with butter or oil. Pour in ¼-cup portions of batter, cooking a few at a time. Cook for 2-3 mins, until edges look set and bubbles appear, then flip gently. Cook for a further 1–2 mins until golden and cooked through.
Stack pancakes and top with fresh fruit and a drizzle of syrup.
