Cottage cheese can be a delightful substitute in dishes. With its high protein content and low-fat composition, it provides an option for those aiming to make smarter choices in the kitchen. The mild flavour of cottage cheese also allows it to blend with the other ingredients, creating delicious combinations in recipes.

Ingredients:
- 6 large eggs
- 250 g cottage cheese
- 1 tsp wholegrain mustard
- 1⁄2 tsp garlic powder
- Salt and pepper, to taste
- 150 g champagne ham, chopped
- 150 g fresh spinach leaves
- 4 spring onions, finely sliced
- 1⁄2 cup crumbled feta
- 1 tbsp olive oil
Method:
Preheat oven to 185°C and grease a rectangular baking dish. Sauté the spinach and spring onions in a pan with olive oil over medium heat for 2–3 minutes until wilted. Let cool slightly.
Whisk the eggs, cottage cheese, mustard, garlic powder, salt, and pepper in a large bowl until well combined.
Add the cooked spinach mixture, ham and feta into the baking dish in layers, spreading out evenly. Gently pour the egg mix over the top.
Bake for 35-40 minutes, or until the frittata is just set in the centre and golden on top. Cool slightly before slicing and serve warm or at room temperature.
