Some days it’s just a bother to think about cooking the evening meal. Moreover, the idea of a large meal holds no appeal. However, this recipe for Pork Mince Loaded Kumara is quick and easy, appetising and not too big. For lunch or dinner, it’s a little gem.

INGREDIENTS:
- 2 medium kumara/sweet potatoes (purple or orange)
- 200g pork mince
- 200ml tomato passata (alternatives: tomato puree, crushed or sieved tomatoes from a tin)
- 1 tsp olive oil
- 1 clove garlic, minced
- 1⁄2 onion, diced
- Salt & pepper
- 100g cottage cheese
- 1⁄4 red onion, diced
- 1 tomato, diced
- 1⁄4 avocado, diced
- 1 tsp apple cider vinegar
- Fresh coriander
METHOD:
Pierce sweet potatoes with a fork and microwave for 5-10 minutes until soft. Heat olive oil in a pan, cook onion and garlic until soft.
Add pork mince, cook until browned. Season with salt and pepper. Stir in passata (or similar) and simmer for 5-10 minutes until slightly thickened.
Slice open sweet potatoes and fluff the inside. Spoon on the pork bolognese, then top with cottage cheese.
Add salsa, red onion, tomato, avocado and fresh coriander. Enjoy!
